Breakfast Bars from Deepak Chopra's cookbook

Breakfast/Snack Bars


Ingredients           2 cups organic, gluten free rolled oats

                           1 cup oat flour or any gluten free flour

                           1 TBS flax seeds

                           1 TBS sesame seeds

2TBS Chia seeds

1 tsp baking powder

½ tsp salt

1 cup dried fruit

1 cup seeds or nuts

1 cup coconut flakes

1 tsp cinnamon

1 tsp. nutmeg

1 tsp ginger

¼ cup turbino sugar

1 ½ cups coconut, soy, or rice milk

¼ cup maple syrup or molasses

¼ cup canola oil or ghee

¾ cup mango puree, smashed banana, or apple sauce

Preheat oven to 350 degrees. Spray a 9-by-13 inch baking dish with oil. Place all dry ingredients in a bowl. Using a wire whisk, combine the mixture well. Place all the wet ingredients in a large bowl and combine with a wire whisk. Add the dry ingredients to the wet ingredients and combine gently, using a spatula. Transfer the mixture to the baking dish and distribute evenly. Bake for approximately 30 minutes or until golden brown. Cool, then cut into 12 bars. Wrap individually, refrigerate or freeze until needed.
